Montanera and Iberian Ham: How Acorn Feeding Improves Quality

Every year, as autumn settles over the Spanish countryside, something quiet but important begins to happen across the dehesa landscapes of Spain. Acorns start falling from the oak trees, and Iberian pigs are released into open pastures to begin what farmers call la montanera. For outsiders, it might simply look like pigs wandering through woodland. But for producers, this period is everything. The price hikes, while beneficial for farmers in the short term, have raised concerns about profitability in the long run, especially considering the rising costs of production that have plagued the sector in recent years. A Surge in Prices At the Salamanca Market meeting held last Saturday, the first prices for acorn-fed Iberian pigs from the current campaign were set. The new prices marked a significant increase compared to the previous year's prices. For 100% Iberian pigs, the prices ranged between €3.58 and €3.78 per kilo, up from €3.47 to €3.67 in the previous year. For 75% Iberian pigs, the price per kilo rose from €3.32 to €3.50/€3.70, while for 50% Iberian pi...
