Discover Culatello di Zibello A Charcuterie Masterpiece from Italy

One of the most prized treasures of Italian charcuterie, Culatello di Zibello, traces its origins back to the 15th century. Born on the southern shores of the Po River in the Parma district’s lowlands, known as Bassa, this delicacy is deeply tied to the region’s unique climate and cultural heritage. The interplay of the river, the area's foggy autumns, and the humid summers have shaped the production process, making Culatello di Zibello a true expression of its terroir. What Makes Culatello di Zibello Unique? Technically, Culatello di Zibello is made from the pork buttock, but it is neither prosciutto nor salami. Instead, it’s a cross-product crafted to preserve meat during the region’s challenging summers and moist cellar conditions. Wrapped and aged in a pork bladder, it is cured to perfection. The process, which dates back centuries, has remained largely unchanged. Production is limited to eight villages protected under the European Certification PDO (Protected Designation of Or...

Minister of Culture Faces Unusual Dilemma Over Ham Curing in Historic Abbey

The French Minister of Culture, Rachida Dati, is faced with an unusual dilemma: whether to allow the drying of hams in the highest tower of an ancient abbey. The hams in question are from the Florus Solatium brand, known for their distinctive curing process, which has gained popularity among connoisseurs. This innovative idea was conceived by Father Philippe Boyer, the rector of the Saint-Flour Cathedral, as a way to fund the restoration of the church’s organ. Father Boyer, having previously introduced beehives on the cathedral roof to produce honey, saw the ham-curing project as a viable solution to raise the necessary funds. The hams, cured in one of the abbey’s two bell towers, were a hit with food lovers, with 60 hams being cured each year. The money generated from these sought-after hams helped restore the cathedral’s much-needed organ. However, the project has now come under scrutiny. A representative from the architects of French heritage buildings raised concerns about the safe...
