Nestled in the picturesque Serranía de Ronda, Dehesa Monteros has set itself apart as a premier producer of 100% Iberian acorn-fed products, often called the "Pata Negra" of hams. Behind this success is an inspiring story of transformation, innovation, and commitment to quality and sustainability.
From Macroeconomics to the Iberian Dream
The story of Dehesa Monteros began with Chelo Gámez, a retired macroeconomics professor from the University of Malaga. Initially uninterested in raising Iberian pigs, her journey took an unexpected turn when a student suggested she purchase a farm in the Genal Valley. What started as a plan to build a family retreat quickly evolved into a mission to produce some of Spain's finest Iberian pork products.
After her husband’s passing, Gámez found solace in the lush landscapes of the Genal Valley. Inspired by the beauty of the cork oaks, chestnut trees, and acorn-bearing Quercus that dotted the region, she began envisioning a new purpose for her farm. By 2024, Dehesa Monteros was celebrating 20 years of transforming these natural resources into exceptional Iberian products.
Athlete Pigs in the Serranía de Ronda
The rugged terrain of the Serranía de Ronda, with its steep 45-degree slopes, plays a crucial role in shaping the quality of Dehesa Monteros’ products. The pigs, affectionately called “athletes” by Gámez, roam freely over thousands of hectares, exercising naturally and consuming a carefully curated diet of chestnuts, acorns, dried peas, and protein-rich triticale wheat.
The pre-montanera chestnut feeding, which takes place before the pigs enter the acorn-rich montanera phase, is key to their meat’s exceptional quality. This month-long chestnut diet, involving over 80,000 kilograms of chestnuts, enhances fat infiltration, reduces astringency, and adds a distinctive sweetness to the final product.
Crafting the Finest Iberian Products
Dehesa Monteros’ commitment to excellence extends to every part of the process. Each of their 1,000 pigs consumes up to 7 kilograms of acorns daily during the montanera, amounting to approximately 1,400 kilograms over their lifetime. This meticulous feeding regimen, combined with the pigs’ active lifestyle, results in products with unmatched creaminess, juiciness, and flavor.
Their Pata Negra products, including hams, shoulders, chorizo, and salchichón, boast superior fat infiltration, high oleic value, and an extraordinary depth of flavor. These qualities have earned Dehesa Monteros a global reputation, with their products now enjoyed in over ten countries, including a growing market in Hong Kong.
Reviving Tradition and Supporting the Serranía de Ronda
Dehesa Monteros is more than a business—it’s a commitment to preserving the culture, environment, and economy of the Serranía de Ronda. The company employs locals, partners with farmers and cooperatives, and leases farms to ensure sustainable pig-raising practices.
A particularly notable project is their work to recover the Rubio Dorado Rondeño, a rare breed of Iberian pig. This initiative, undertaken in collaboration with the University of Córdoba and local organizations, ensures the survival of this heritage breed, marketed under the exclusive Raza&Oro label.
A Vision for a Sustainable Future
For Chelo Gámez, Dehesa Monteros is more than a retirement project—it’s a legacy of quality, sustainability, and social responsibility. As she blends her economic expertise with her passion for the Serranía de Ronda, her “Iberian dream” continues to thrive, offering a taste of tradition and excellence to the world.
With every slice of Pata Negra, Dehesa Monteros tells a story of dedication to the land, the animals, and the people who make this extraordinary journey possible.
