The 2024/25 montanera season has been most productive recently, attributed to good weather conditions and a plentiful supply of acorns in the fields. This has been a major advantage for the renowned Spanish producer Miguel España e Hijos. The company announced plans to slaughter approximately 1,500 pigs during this campaign. As a result, the company expects to yield 3,000 acorn-fed Iberian hams and an equal number of shoulders, ensuring that its tradition of quality and excellence remains intact.
Sustainable Production in Harmony with Nature
Miguel España e Hijos has a vast estate of 1,500 hectares, where 450 animals are raised annually. To meet the increasing demand while upholding its quality standards, the company also works with reliable local farms with which it has established long-term partnerships. This sustainable model ensures the continuity of traditional Iberian ham production and respects the environment, preserving the delicate balance of the dehesa ecosystem which is essential for raising free-range Iberian pigs.
The Pata Negra ham, one of the most prized delicacies in the world, is a product of this careful and time-honored process. Iberian pigs raised in free-range conditions roam through oak-rich fields, foraging for premium acorns during the montanera season, which imparts a unique flavor, aroma, and texture to the meat. The resulting hams have a rich, nutty taste and melt-in-the-mouth consistency. These characteristics make the hams a gastronomic treasure.
Bringing the Montanera Experience to Clients
To give customers and industry professionals a firsthand look at the importance of the montanera in acorn-fed Iberian ham production, Miguel España e Hijos recently organized an exclusive field day at its estate. During this event, attendees had the rare opportunity to witness free-range Iberian pigs in their natural environment, experiencing the slow, artisanal process that defines these exceptional products.
One of the day’s highlights was tasting 100% Iberian acorn-fed hams from different vintages—2020, 2021, and 2022. Carlos Muñoz, a master ham carver and expert in showcasing the unique qualities of each piece, demonstrated his skill by slicing thin, delicate pieces that perfectly illustrated the differences between the vintages. His knowledge, precision, and technique captivated the audience, as he explained how time, climate, and diet influence the final flavor of each ham.
The event gathered 30 guests, including hospitality and retail professionals, offering a valuable exchange of insights, experiences, and industry perspectives. The day concluded with a spectacular countryside meal prepared by renowned chef Alfonso Beltrán from La Fonda de Torrijos (Toledo). The carefully crafted menu featured traditional Spanish dishes, highlighting the intense, umami-rich flavors of Pata Negra ham. A flamenco guitarist added a touch of authentic Andalusian charm, making the experience even more memorable.
The Global Appeal of Pata Negra Ham
The demand for Pata Negra ham continues to grow worldwide, driven by an appreciation for its artisanal production methods and unparalleled quality. The meticulous montanera process, the pigs’ free-range lifestyle, and the careful aging in natural cellars contribute to the deep, complex flavors that gourmets and food lovers seek.
