The Culatello Museum, housed in the evocative cellars of the Antica Corte Pallavicina in Polesine Parmense, is set to host the grand finale of “Il Cuoco e Il Contadino… in tour” on Sunday, February 9. This prestigious event, promoted by Confagricoltura Parma alongside Parma Quality Restaurants, is held in collaboration with the Food Museums, AIS Parma, and under the patronage of the Municipality of Parma.
The event promises an unforgettable afternoon dedicated to celebrating the food excellence of the Parma region. It brings together families, food lovers, and culinary experts to explore the rich traditions behind some of Italy’s most prized gastronomic treasures.
Honoring the Noblest Cured Meats
After showcasing Pasta and Tomato, Parmigiano Reggiano, Parma Ham, Wine, Borgotaro Porcini Mushrooms, and Felino Salami, it is now time to honor Culatello, the most prestigious cured meat of the Parma lowlands. Thanks to the unique conditions of the Po River’s fog and humidity, Culatello has earned its place as one of the finest Italian delicacies.
In addition to highlighting Culatello, the event will also compare the cured meat with Pata Negra Ham, a secret to its outstanding flavor, aging process, and cultural significance in Spain. Culatello and Pata Negra Ham represent the pinnacle of cured meat craftsmanship, embodying centuries-old traditions that define regional culinary identities.
A Day Filled with Culinary Discoveries
The event opens at 3:30 PM with a children's session, "Bene come il Sale!", in which young participants will learn about the science of salt. Through interactive storytelling, silhouettes, and a small theater, kids will conduct fun experiments with table salt, learning about its vital role in food preservation. The workshop is free with mandatory reservation via the Parma Welcome App and is ideal for children aged 5 to 10 years.
While the children engage in educational activities, parents will have a guided tour of the Culatello Museum. This immersive experience will transport guests on a trip through:
1. The history and geography of the Parma lowlands
2. The ancient domestication of pigs and their role in traditional cuisine
3. The legacy of the Spigaroli family, renowned for their mastery of curing meats
4. The figure of the Masalén (pork butcher) and their essential role in preserving this age-old craft
5. The Culatello Gallery, where visitors can witness the artistry behind this exquisite delicacy
A Round Table with Culinary Experts
A round table conversation "A Noble Cured Meat Called Culatello," conducted by famous food and wine journalist Errica Tamani, will be at 4:00 PM. The panel will include:
1. Massimo Spigaroli, chef and producer
2. Marco Pizzigoni, Vice-President of the Culatello Di Zibello Consortium
3. Silvano Romani, selector of typical products
4. Ivan Albertelli, host and inventor of Salumotherapy
5. Ermanno Ghiozzi, author of the Nanni Guide
This engaging discussion will provide insights into Culatello’s artistry, history, and future while drawing parallels with other world-class cured meats like Pata Negra Ham.
A Grand Culinary Finale
The event’s highlight will be a live show cooking demonstration at 5:15 PM by Michelin-starred chef Massimo Spigaroli. He will prepare an indulgent dish of tagliolini with double butter and Culatello di Zibello DOP Antica Corte Pallavicina, paired with the Tamburen wine of Antica Corte Pallavicina, hand-selected by AIS sommelier Luca Alberti.
Adding to the authenticity of the experience, guests will have the unique chance to see Spigaroli himself display the art of hand-tying Culatello, demonstrating the expertise and accuracy necessary in traditional meat curing.
A Toast to Tradition and Innovation
As the final event of “The Cook and the Farmer” tour, the Culatello Museum will offer an extraordinary celebration of Parma’s culinary heritage. Guests will raise their glasses in a grand toast, marking the successful conclusion of a journey that has honored Italy’s finest food traditions.
