Monte Nevado Reinvents the Ham and Bread Experience

Pata Negra Ham

Monte Nevado, a distinguished name in gourmet hams, has once again redefined culinary boundaries with its latest edition of the "Unexpected Pairing" series. This innovative initiative transforms the traditional ham and bread combination into a multisensory journey, this time spotlighting the harmonious fusion of orange wines and artisan bread. The result is an elevated gastronomic experience that tantalizes the palate and challenges conventional pairings.

A Guided Sensory Exploration with Jonatan Armengol
The event was masterfully led by renowned food critic Jonatan Armengol at El Privado, accompanied by Chema de la Fuente, Monte Nevado's communications manager. Together, they orchestrated a blind tasting featuring three of Monte Nevado's exceptional hams: the 100% Bellota Iberian Ham, the Mangalica Ham, and the 24-month Serrano Ham. Each was thoughtfully paired with distinctive artisan breads and meticulously selected orange wines, crafting a narrative of flavors that unfolded with each course.

Artisan Breads and Orange Wines: A Symphony of Flavors
Master baker Paco Fernández from Viena La Baguette bakery laid the foundation of this pairing. He presented sourdough loaves with extended fermentations, each boasting a unique character that complemented the hams' profiles. These breads were paired with a curated selection of orange wines, including La Viña de Ayer, El Grifo OW, Ánima Mundi, Pureza 2023, and Pell a Pell Pardas. These wines, known for their acidity, freshness, and fruity nuances, elevated the tasting experience, creating a dialogue between the food and drink that was both unexpected and delightful.

Embarking on the Pairing Journey
The culinary voyage commenced with the 100% Bellota Iberian Ham, renowned for its silky fat and rich flavor. It was paired with a robust rye bread, whose dense texture and earthy notes provided a grounding contrast. This combination was further enhanced by La Viña de Ayer, an orange wine that introduced a layer of complexity with its aromatic depth. A subsequent serving featured the same ham atop crispy grissini, accompanied by El Grifo OW, a wine celebrated for its intense aromatic profile, adding a crisp and fragrant dimension to the experience.

The pairing embraced tradition and nostalgia transitioning to the 24-month cured Serrano Ham. Classic bread such as candeal and payés evoked memories of time-honored flavors, their subtle sweetness and firm crumb complementing the ham's delicate saltiness. An olive oil cake infused with Provençal herbs introduced a refreshing herbal note. Ánima Mundi wine accentuated the ham's cereal and umami undertones, creating a harmonious blend that resonated with the essence of comfort food.

The exploration took an exotic turn with the Mangalica Ham, a Hungarian breed revitalized by Monte Nevado. This ham's delicate and enveloping flavors found companions in raisin bread and orange ciabatta soaked in ginger syrup, each adding layers of sweetness and spice. The pairing was completed with Pureza 2023, a wine crafted from Muscat of Alexandria grapes, whose floral and fruity notes mirrored the ham's subtle complexities, resulting in a dance of intricate and balanced flavors.

The Grand Finale: A Celebration of Innovation
The culmination of the tasting featured the 2020 limited edition Jamón de Bellota 100% Ibérico, a true masterpiece of flavor and craftsmanship. This exceptional ham was paired with inventive bread: one infused with paprika, another crafted with blonde beer, and a third enriched with dark cocoa. Each bread introduced a new dimension, from smoky warmth to malty sweetness and bittersweet richness. The Pell a Pell Pardas wine, with its slightly bitter finish, provided a counterpoint that balanced and highlighted the ham's multifaceted flavors, bringing the journey to a satisfying and thought-provoking conclusion.

A Familiar Yet Surprising Epilogue
A white cake was served to round off the experience, offering a comforting familiarity with an unexpected twist. This final note encapsulated the essence of the "Unexpected Pairing" series: a celebration of innovation rooted in tradition, inviting diners to rediscover familiar flavors through a new lens.

Not Mold, Not Salt: The Truth About White Dots in Iberian Ham

If you’ve ever sliced into a piece of jamón ibérico and noticed small white dots on the meat, your first thought might be: Is this mould, or maybe the ham gone bad? Some even believe it’s salt that has pushed to the surface. However, experts like endocrinologist and food communicator Manuel Viso clarify the confusion. Those specks are actually tyrosine crystals, and far from being a defect, they are often a sign of quality. What Exactly Are They? Tyrosine is one of the amino acids that make up proteins. When ham is cured for an extended period — sometimes years — the proteins slowly break down, releasing amino acids. Under the right conditions of humidity, temperature, and time, tyrosine can form small white crystals that are visible on the surface of the ham. So, when you see those little spots, it usually means the ham has been cured patiently and naturally. They are not only safe, but also part of the natural transformation that gives Iberian ham its unique character. Clearing Up C...
