The Salamanca Chamber of Commerce has given a big thumbs-up to FISAN (Florencio Sánchez e Hijos), a family-run Iberian ham producer from Guijuelo, by awarding them the Accésit for Internationalization. This prize recognizes companies that manage to blend old-school craftsmanship with a global mindset — and FISAN fits that bill perfectly.
During the ceremony, Eva, Javier, and Florencio Sánchez took the stage to accept the award, clearly proud and emotional. They dedicated the honor to their parents, saying they were the ones who “taught us to work with passion, patience, and never to give up.” It was one of those moments that reminds you success doesn’t just happen overnight — it’s built on decades of effort and family legacy.
From Salamanca to the World
What started as a small local curing house in Guijuelo more than a hundred years ago has grown into an international brand. Since around 2018, FISAN’s export department has experienced significant growth, increasing from just 1% of total sales abroad to nearly 15% today.
They now supply around 100 clients in more than 25 countries, reaching as far as China, the U.S., Singapore, Australia, Dubai, and even Vietnam. That’s not bad for a family business from a small town in Spain. It shows not just ambition, but real strategy — they’ve managed to keep their identity while expanding into some of the toughest gourmet markets.
Keeping It Real: Quality Above All
For FISAN, internationalizing isn’t just about numbers. It’s about sharing a culture. Their Iberian ham and sausages tell a story — about Spain, about the dehesa (the oak forests where the pigs roam), and about doing things the right way.
That’s probably why their products continue to win awards. FISAN has picked up the Superior Taste Award twice, in 2021 and again in 2024, from the International Taste Institute in Brussels. They also won at SIAL Paris 2018 for their acorn-fed salchichón with black truffle. Not too shabby, right?
Blending Tradition with Tech
In 2020, the company opened new facilities of approximately 7,500 square meters, equipped with modern curing and packaging technology. But even with all that innovation, they’ve stayed true to the slow, traditional curing process that defines the flavor of real Guijuelo ham.
They also keep their Protected Designation of Origin (PDO) certification — that seal that guarantees authenticity, origin, and quality. In short, they’ve modernized without losing their soul.
Going Global, Staying Local
A significant part of FISAN’s strategy has been to participate in international fairs, such as Anuga 2025 in Germany, one of the world’s most important food industry events. They showcased their best products, built new partnerships, and ensured that people knew “Iberian ham” means something special when it bears the FISAN name.
They’ve also had support from ICECYL (the Castilla y León Business Competitiveness Institute), which helped them push into Asia and North America — two key markets for premium Spanish food.
A Recognition That Means Something
Winning this award isn’t just a nice trophy for the shelf. For FISAN, it’s proof that hard work, consistency, and family values can take a local business to a global stage.
The Chamber of Commerce called them “ambassadors of Guijuelo’s gastronomic excellence,” and honestly, it’s hard to disagree. As the Sánchez family put it:
“Our goal is to take the soul of Iberian ham to every corner of the world — without losing our essence.”
With that spirit, FISAN continues to prove that tradition and modern vision can walk hand in hand — from the pastures of Salamanca to the tables of the world....LEARN MORE
