From Serrano to Ibérico: Spain Searches for Its Top Jamón

Spain has once again put one of its most iconic foods in the spotlight: jamón. The Ministry of Agriculture, Fisheries and Food has opened the 2026 edition of the Alimentos de España Awards for Best Hams, a national contest that recognizes quality, tradition, and the skill behind Spanish cured ham.

Applications are open until May 7, 2026, giving producers across the country the chance to present their best pieces. The goal is not only to choose a winner but also to promote Spanish ham as a product with a history, identity, and real craft behind it.

Two Categories, One Big Tradition

The awards are divided into two main groups. One is for Best Serrano Ham or other recognized quality figures, while the other focuses on Best Bellota Ibérico Ham, one of Spain's most famous gourmet products.

To take part, producers must be based in Spain, and the company itself must make the ham. They also need to show a steady production record, including at least 1,500 pieces a year over the last three years. So, this is not just about one good ham. It is about consistency, experience, and trust.

More Than a Slice of Ham

In Spain, jamón is never just food on a plate. It belongs to family tables, tapas bars, celebrations, markets, and quiet everyday meals. A thin slice of well-cured ham can carry the flavors of time, salt, climate, and tradition.

That is why these awards matter. They give visibility to producers who protect old methods while still meeting modern standards. For many small and established companies, official recognition can also help them stand out in a busy market.

Pride, Quality, and Pressure

The Spanish ham sector is full of pride, but it also faces pressure. Producers compete with different labels, origins,s and quality claims, while consumers are becoming more careful about what they buy. In the ibérico world, especially, questions around breed, feeding,g and authenticity continue to be important.

Still, Spanish jamón remains one of the country's strongest food ambassadors. Whether it is served in a fine restaurant or sliced at a local bar, it has a way of speaking for itself. No heavy sauce, no big explanation. Just flavor, patience, and a sharp knife.

Why the 2026 Awards Matter

The winners of the 2026 Alimentos de España Awards will receive more than a title. They will gain credibility among buyers, restaurants,s and food lovers, both in Spain and beyond. Behind each piece of ham are farmers, curing experts, cutters, family businesses, and local economies that depend on this tradition.

Good jamón cannot be rushed. It takes months, sometimes years, to reach the right texture and aroma. And that is what this competition really celebrates: slow work, careful hands,s and a product that still feels deeply Spanish.

As Spain begins the search for its best hams of 2026, the message is clear. Tradition is not something frozen in the past. It is kept alive every time a producer cures a ham properly, every time a cutter serves it with care, and every time someone enjoys that first salty, delicate bite.....LEARN MORE

Not Mold, Not Salt: The Truth About White Dots in Iberian Ham

If you’ve ever sliced into a piece of jamón ibérico and noticed small white dots on the meat, your first thought might be: Is this mould, or maybe the ham gone bad? Some even believe it’s salt that has pushed to the surface. However, experts like endocrinologist and food communicator Manuel Viso clarify the confusion. Those specks are actually tyrosine crystals, and far from being a defect, they are often a sign of quality. What Exactly Are They? Tyrosine is one of the amino acids that make up proteins. When ham is cured for an extended period — sometimes years — the proteins slowly break down, releasing amino acids. Under the right conditions of humidity, temperature, and time, tyrosine can form small white crystals that are visible on the surface of the ham. So, when you see those little spots, it usually means the ham has been cured patiently and naturally. They are not only safe, but also part of the natural transformation that gives Iberian ham its unique character. Clearing Up C...
